Hainan Chicken Rice

Ingredients

Marinate Chicken:

  • 4 chicken thigh (with skin)
  • 1 tsp salt
  • 1 pinch ground white pepper
  • Rice
  • 1½ cup Jasmine rice
  • 2 tbsp cooking oil
  • 4 stalks scallions (finely chopped)
  • 1 tbsp ginger (minced)
  • 1 tbsp garlic (minced)
  • ¼ tsp salt


Sauce:

  • 2 tosp light soy sauce
  • 1 tbsp fresh lime juice
  • 1 tsp sesame oil
  • Optional, Fresh chili (finely chopped)

Preparation

  1. Rinse the rice with cold water, drain and set aside.
  2. Heat oil in a Le Creuset Marmite Stir-Fry Pot over medium heat. Add chopped scallions, minced ginger, and minced garlic. Sauté until fragrant.
  3. Transfer half of mixture to a small bowl for later use.
  4. Add the drained rice, sauté for about 30 secs. Pour in 2 cups of water and add ¼ teaspoon of salt. Loosen any grains stuck to the pot with a silicone spatula.
  5. Arrange marinated chicken pieces on top of the rice without overlapping.
  6. Cook rice uncovered until the water gently boils over medium heat.
  7. Then cover with lid and reduce to low heat. Let it cook for 20 mins.
  8. Turn heat off and let it sit for 10 mins.

* Remember not to open the lid during the cooking and resting process.


Serving

  1. Remove the chicken thighs and extract bones.
  2. Slice into bite-sized strips.
  3. Plate rice on individual serving plates. Chicken on a side, accompanied by cucumber slices.
  4. Mix light soy sauce, lime juice, sesame oil, and fresh chili (optional) with the saved sautéed aromatics.
  5. Serve this as a dipping sauce or drizzle it over the chicken.
