Seafood Lodeh

Ingredients

INGREDIENTS A

  • 30g dried shrimp
  • 50g fresh turmeric
  • 50g shallots
  • 30g garlic

INGREDIENTS B

  • 2 cups coconut milk
  • 5 cups water
  • 1 tablespoon salt

INGREDIENTS C

  • 250g large prawn (remove head & skin, deveined)
  • 150g squid
  • 150g clams
  • 1 lemongrass stalk (smashed)
  • 70g tempeh
  • 70g hard firm tofu
  • 70g carrot (sliced)
  • 70g long beans (cut to 1 inch length)
  • 70g round cabbage (square size cut)
  • 70g aubergine (cut to 1 inch strip)
  • 70g glass noodles (soak in water until soft)
  • 70g foo chuk (soak in water until soft)

Preparation

  1. In a Le Creuset Marmite 26cm pot, add in ingredients A to boil for 5 minutes. (No oil is required.)
  2. Lower the heat and add in ingredients B. Stir for another 5 minutes until the dish is cooked or begins boiling.
  3. Then, add in ingredients C. Cook over medium heat for another 5 minutes or until prawns are fully cooked. Turn off the stove and serve the dish immediately.
