Jamaican Brown Stew Chicken

Serves : 4-6 people
Ingredients
- 800g chicken drumsticks and thighs
- 1 tbsp all purpose seasoning
- 1 tbsp chicken seasoning
- 1 tsp browning
- 1 tsp pimento
- 5 garlic cloves
- 2 spring onions
- 1 green bell pepper
- 1 onion
- Handful fresh thyme
- 1 scotch bonnet
- 1 tbsp tomato ketchup
Preparation
- Season chicken with all purpose seasoning, chicken seasoning, browning, pimento, minced garlic, diced spring onions, sliced bell pepper, and onion.
- Let marinate overnight, or for at least 30 minutes. (Grind spices if needed.)
- Brown chicken on both sides until golden. Cook in batches to avoid overcrowding.
- Add the vegetables from the marinade into the pan along with thyme and scotch bonnet.
- Cook on low for 15 minutes with a lid on to steam.
- Add boiling water or chicken stock and ketchup.
- Cover and cook on low for about 1 hour, or until chicken is fall-off-the-bone tender.
- Season to taste and serve.
