Jamaican Brown Stew Chicken

Serves : 4-6 people

Ingredients

  • 800g chicken drumsticks and thighs
  • 1 tbsp all purpose seasoning
  • 1 tbsp chicken seasoning
  • 1 tsp browning
  • 1 tsp pimento
  • 5 garlic cloves
  • 2 spring onions
  • 1 green bell pepper
  • 1 onion
  • Handful fresh thyme
  • 1 scotch bonnet
  • 1 tbsp tomato ketchup


Preparation

  1. Season chicken with all purpose seasoning, chicken seasoning, browning, pimento, minced garlic, diced spring onions, sliced bell pepper, and onion.
  2. Let marinate overnight, or for at least 30 minutes. (Grind spices if needed.)
  3. Brown chicken on both sides until golden. Cook in batches to avoid overcrowding.
  4. Add the vegetables from the marinade into the pan along with thyme and scotch bonnet.
  5. Cook on low for 15 minutes with a lid on to steam.
  6. Add boiling water or chicken stock and ketchup.
  7. Cover and cook on low for about 1 hour, or until chicken is fall-off-the-bone tender.
  8. Season to taste and serve.
