Chicken Satay Lemongrass

Ingredients
INGREDIENTS A
(Blend coarsely using food processor)
- 500g minced chicken
- 30g shallots
- 15g garlic
- 15g ginger
- 15g red chilli (remove seeds)
- 30g fresh turmeric
- 1 tablespoon cooking oil
INGREDIENTS B
- 3g white pepper powder
- 10g coriander leaves (chopped)
- 2 fresh kaffir lime leaves (slice into fine strips)
- 10g chicken stock powder
Preparation
Mix:
Put ingredients A into a mixing bowl, add in ingredients B and mix well.
Shape:
Break off pieces of the mixture (about 50g – meatball size). Flatten into a round and lay a lemongrass stalk. Mould around the bulbous end of the stalk, covering about 8 cm. Roughen the surface with your fingers for texture. Set aside and brush each satay with extra oil.
Grill:
Apply a layer of oil onto the Le Creuset Rectangular Grill, heat until oil ripples.
