Apam Balik

Ingredients

  • 2 cups flour
  • ¼ cup sugar
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 1 egg
  • 1½ cups milk
  • 2 tbsp butter
  • Pinch of salt
  • Oil
  • Roasted chopped peanuts
  • 1 can creamy sweet corn
  • 1 cup granulated sugar


Preparation

  1. Combine flour, baking powder, baking soda, and salt. Sift the mixture.
  2. Microwave butter until melted.
  3. Beat eggs with sugar until well combined. Add milk and melted butter, then continue stirring until thoroughly mixed.
  4. Add the sifted ingredients and stir until smooth, lump-free flour mixture is achieved.
  5. Marinate for an hour. Heat a Le Creuset Toughened Non-Stick Saute Pan over low heat. Lightly coat a thin layer of oil on the pan's surface.
  6. Pour a spoonful of batter, allowing air bubbles to rise briefly.
  7. Sprinkle a little sugar, corn, and peanuts. Fold and flip the pancake.
