Apam Balik

Ingredients
- 2 cups flour
- ¼ cup sugar
- 1 tsp baking soda
- 1 tsp baking powder
- 1 egg
- 1½ cups milk
- 2 tbsp butter
- Pinch of salt
- Oil
- Roasted chopped peanuts
- 1 can creamy sweet corn
- 1 cup granulated sugar
Preparation
- Combine flour, baking powder, baking soda, and salt. Sift the mixture.
- Microwave butter until melted.
- Beat eggs with sugar until well combined. Add milk and melted butter, then continue stirring until thoroughly mixed.
- Add the sifted ingredients and stir until smooth, lump-free flour mixture is achieved.
- Marinate for an hour. Heat a Le Creuset Toughened Non-Stick Saute Pan over low heat. Lightly coat a thin layer of oil on the pan's surface.
- Pour a spoonful of batter, allowing air bubbles to rise briefly.
- Sprinkle a little sugar, corn, and peanuts. Fold and flip the pancake.
